Generally speaking, they should be close enough that a standard Raise Skeleton spell would only have to be slightly tweaked for each race. Drakes would have to account for the tail; gnolls and many beastkin would probably have slightly different feet/lower legs; you’d have to adjust for different skeleton sizes; etc.

But more or less, the fact that they are described as ‘humanoid’ would mean the basic mechanics of the skeleton, at least, should be fairly similar. Quite likely different numbers of bones, but they would still all be in a reasonably similar configuration.

On the other hand, something that animates and uses the actual flesh of the corpse – especially for higher quality undead like draugr – would be a bit different. Since you aren’t just using magic to move the bones, but need the existing muscles to work correctly, getting a good result would probably need more specialized knowledge.

For example, getting a gnoll’s legs to work with just the bones wouldn’t be too much different compared to a human. They can run on either two legs, or on all four limbs – but you don’t really need them to be able to do that as a skeleton. With actual muscles, though, you are going to have a very different configuration around the thighs to support both kinds of movement. Even if you don’t need them to run on four limbs, the muscles are still there, so the spell is going to have to take that into account. It may not after as much for a weak zombie, but that’s probably the type of thing you’d have to account for in a draugr.
