You’re forgetting that it is entirely possible the same mold might not exist in Innworld. Considering how different the ecology is overall, I’d say it’s more likely than not that you’d get completely different strains of mold on bread, compared to the ones that develop on Earth.

Honey would be good, but that’s going to depend on having a good source for it. If many of the bee species are as big as Ashfire bees, I could definitely see not many people farming them.
